Sunday brunch...tofu scramble wrapped in a tortilla with avacado and salsa, french toast, fruit and oj.......mmmmmmm!
The scramble recipe is from the post punk kitchen. The only modification I made was to add some green pepper.
This is the first time I've made vegan french toast, and it was very good. I used the wrong bread though, a crusty type bread, or really thick bread is almost a requirement. The regular sandwich bread I used had to be almost burnt to cook it all the way and it was still pretty mushy in the middle. The Emo kid loved the french toast and Boo said it reminded him of summer camp, so YAY!--I'll take every success I can get.
